Hai, for this N3, anak bujang NB pulak buat pie for the family. The only son, 13 yrs old memang minat sangat kat pastry. Alhamdulillah lepas gak le buat cuci mulut sekeluarga. Sebenarnya pie ni dah kali kedua dia buat. The first one dia add strong coffee kat saucenya and second ni dia try dgn mocca pulak. But I like the one with coffee ada rasa pahit-pahit manis, best.
So, this is the recipe ya:
MISSISSIPPI MUD PIE
1 cup flour
¼ tsp baking powder
1 cup sugar
½ cup butter
1 tsp vanilla extract
400 gms choc (coarsely chop)
2 eggs (lighty beaten)
Preheat oven 180 c. Grease and line a 8 in square cake pan.
Mix together flour and baking powder.
In a small saucepan, combine sugar, butter and 3 tbsp water. Bring to boil and remove from heat. Stir in vanilla and add half the choc (200gm). Mix well until smooth. Let cool.
Stir egg into cooled mixture and beat well. Add flour and stir to blend. Fold in remaining choc. Bake for 30 min.
Drizzle with warm choc, sprinkle with nuts or top with 1-2 scoops ice cream. Walla…..
100 gms dark / choc (chop into pieces)
½ cup strong coffee or ½ cup water and 1 tbsp coffee/mocha paste/emulco.
¼ cup superfine sugar
Melt choc in double boiler, add coffee and sugar. Stir over med heat until smooth and creamy.
